ASSISTANT HEAD BREWER/LEAD BREWER

 

Loch Lomond Brewer is a multi-award winning brewery located in Dumbarton on the edge of the Loch Lomond and Trossachs National Park. Since our humble beginnings in 2011 the brewery has enjoyed steady growth in both domestic and international markets. The Brewery has invested in distilling equipment and has recently launched its West Highland Spirits brand.  With gin and vodka already in the market and rum and whisky to follow shortly, 2024 looks to be busy with both beers and spirits.

 

To support our ambitious plans, we are looking for an assistant head brewer/lead brewer who has the technical knowledge and experience in brewing with an interest in distilling. We are looking for someone who is passionate about beer and shares the same aspirations and values as we do with a desire to constantly improve and evolve in a highly competitive brewing industry.  Our desire is for the appropriate candidate to move into the head brewer role with Loch Lomond Brewery if they show all the correct attributes.

 

The job will stretch across every brewing production discipline including packaging. Key duties will include but not limited to the following:

 

  • Responsible for the smooth running of day to day brewery operations.

  • Produce and develop beer recipes on our 35 HL brew block.

  • Lead the brewing production team (Leadership skills and good communication skills are essential)

  • Implement Quality Control and ideally be HACCP trained and have experience of operating in a SALSA approved facility.

  • Ensure HMRC Compliance

  • Laboratory work including yeast analysis and microbiological testing.

  • Liquor treatment

  • Prepare beer for packaging to the right carbonation and levels of filtration

  • Manage the packaging process including cask racking, kegging and canning.

  • Operate CIP systems for cleaning of vessels and brewing equipment. 

  • Understand, implement and comply with all aspects of brewery Health and Safety.

  • Operate the brewery management system for all brewing related activities including goods in and out protocols.

  • Waste management and Scottish Water compliance.

  • Promote the brewery as a brand ambassador at internal and external events. This could require overseas travel.

  • Complying with and developing SOPs.

 

Key experience requirements

 

It is not essential however the ideal candidate should hold a formal industry recognised brewing qualification (ie IBD diploma or studied to degree level or equivalent).

Experience must be demonstrated of working at a senior level in other breweries.

It is essential that the candidate is highly motivated and can Lead others in a challenging work environment. 

The ability to resolve issues on a day to day is a key aspect of this position. A sound knowledge of engineering principles and mechanical engineering will be needed to keep operations running smoothly on very complexed machinery.

 

As the brewery has invested in its own canning line and is seeing a large percentage of its growth coming from canned beers, experience of operating a canning line is desirable.

 

This is a physically demanding position and all our staff must be able to be able to stay active for the duration of full shift and safely undertake manual handling procedures to lift 25kg and manoeuvre 60kg.

A full and clean drivers licence is required for this position.

DRAYMAN/PACKAGING OPERATIVE

We have an interesting and exciting opening for a drayman/packaging operative to join the team at Loch Lomond Brewery 

Loch Lomond Brewery is 12 years old based in Dumbarton, Scotland, producing award winning beers from ales to lagers and stouts and IPAs. We recently launched West Highland Spirits producing several craft gins and vodka with plans to launch rum and whisky in the coming months.

The applicant must be able to drive a 3.5t van, be fit and capable of heavy lifting. Self-motivation essential, and above all friendly and reliable.

Duties will involve delivering casks, kegs, bottles and cans across Scotland and Northern England, as well as packing casks, kegs, cans and helping at the warehouse, putting away stock and loading vans for delivery and general tidying of the warehouse etc with scope to take on other roles in the future.

As the face of the company, we would expect only the best conduct and customer service at all times.

Experience delivering and/or in the hospitality trade would be beneficial.

An interest in good beer would be advantageous!

Full-Time position with an Immediate start.

  • Must live local to Dumbarton

  • Have a full clean UK driving Licence

BREWERY ASSISTANT – temporary summer position

Loch Lomond Brewery are seeking a temporary summer team member to assist with our busy summer production. The starting date is negotiable but we hope it to be near the end of May at the latest and continue to September.

We have been brewing beer for over 12 years and currently produce on a 32HL SSV, semi-automated, two vessel brewhouse.  We have just launched our spirit brand under the name West Highland Spirits producing gin and vodka with rum and whisky coming soon.

Key Responsibilities:

This is an entry level role created for assisting in all areas of production from cellar work to despatch. You will spend time in various areas such as cellar duties, packaging, warehousing, despatch (which covers online shop), pallet loading and securing & direct distribution.  Basically all tasks that support the process from beginning to end. Reporting to our Production Supervisor, you’ll work a 5-day week, Monday to Friday 8am – 5pm.

Duties include:

  • Assisting with cellar operations – using CIP equipment, readiness for packaging

  • Packaging – Packing and palletising the end product and food safety QA checks.

  • Warehousing – General organisation, stock checks, stock rotation between storage areas

  • Despatch – Pallet loading, online shop, direct despatch & direct deliveries

  • Ensuring site cleanliness in line with SALSA food safety standards

Competencies and Experience:

  • An ability to learn new tasks quickly and react to priority changes in a fast-paced environment.

  • A good attitude in general and towards new skills

  • Great attention to detail

  • Enthusiasm for the industry

  • Experience in any of the duties above, advantageous
